snapraid newb. OMV SYNC and SCRUB
I'd recommend using the following script: https://github.com/auanasgheps/snapraid-aio-script - it's a bit more robust than what is baked into OMV. That being said, I used the OMV default scripts for a few years without issue.

Suggestions on drive configurations and backups (2x12TB RAID1 to 2x12TB + 16TB rsync/snap)
I had also no experience, but bought a few disks for experimenting and now as you can see very like both solutions. Even mergefs + snapraid you will like it. Also, don’t forget to run ‘snapraid sync’ when you created pool and setup snapraid disks and then create schedule task for this script https://github.com/auanasgheps/snapraid-aio-script It will help you automatically support health of your data and each script execution you will have notifications about your smart info and pool itself.

OMV + SnapRAID + MergerFS to eliminate bit-rot and give the best of both worlds of Unraid & TrueNAS SCALE for storage flexibility and safety?
I'm running that setup (on ext4) and it works great. There's a cool script (here) that you can have a look for snapraid tasks. It was important for me to be able to juggle discs and move data as I see fit, and it works great.

Snapraid Parity question
You could also add this script https://github.com/auanasgheps/snapraid-aio-script to run on a daily basis to scrub and check parity of your data drives.
- Setup snapraid with partially filled disks

Salvaguardare i ricordi di Google Foto trasferendoli su hard disk
MergeFS un altro must!
