There are steps available to mitigate those issues, including using AOSP without Google Play Services. GrapheneOS is also a great option for those with a more extreme threat model since it's even more private than iOS. However, how much usability you can sacrifice for privacy depends entirely on you.
...which is why removing Google Play Services from Android improves its privacy dramatically. AOSP on its own works just fine. MicroG and Sandboxed Google Services (only on GrapheneOS) are available for those cases that require those proprietary components.
