GrapheneOS does not include any native tracker blocking implementations. For such, I'd recommend DNS-based ad-blocking such as NextDNS. GrapheneOS does allow the creation of user profiles, which can isolate apps and their data between profiles. The same can be achieved with work profiles through Shelter.

GrapheneOS doesn't change anything regarding VPNs. It is up to your VPN provider to support streaming services. Proton VPN has special servers dedicated to streaming on their paid plan. These servers have worked fine for me on Netflix.
